If you select a tag from this option, when someone places an order, this tag will be applied to that contact. By this tag, you can trigger a workflow. Keep in mind, that if you use this tag to trigger a workflow, you need to remove that tag at some point of that workflow. Otherwise, it won't work the next time if that specific tag is already applied to the contact.
